This brandy made from the small, pear-shaped fleshy fruits of the service tree is considered by some to be the finest fruit spirit ever made. The fragrance and flavour are typical of the ripe fruits of this rare variety. The service tree is an exceptionally rare sight – and is becoming even more difficult to find because it is not at all hardy against climate change – and therefore its fruits are highly prized. The brandy is produced by the continuous distillation of ripe mash made from fruits that are allowed to overripen prior to fermentation. Continuous distillation in distillation columns ensures the preservation of the aroma and flavour of the fruit.
